Vegetable Lasagna

I absolutely love Italian meals such as lasagna but I wanted to change it up. I gave the family lasagna recipe a twist by adding vegetables and changing out the noodles for gluten-free, chickpea lasagna noodles!




 

Nutritious and Delicious


Lasagna is a family favorite in my house. When I went away for school, I tried vegetable lasagna for the first time and loved it! I was never able to get the recipe from school for their vegetable lasagna so I had to improvise! I figured I would use the foods I had available to me, which consisted of my preferred vegetables and Banza lasagna.


For those of you who have never heard of Banza, it is a pasta company who makes pasta from chickpeas to produce a delicious, gluten free alternative to pasta. Along with being gluten free, this pasta is: non-GMO, allergen free and kosher.


Food Label Vocabulary:

    Gluten Free: A diet not containing gluten. Gluten is a family of proteins that are naturally found in certain cereal grains, such as wheat, barley, and rye. 
    
    Non-GMO: meaning no genetically modified organisms are present. (Non-GMO does not mean the product is organic).
    
    Allergen Free: the product is not made with ingredients that include "major food allergens" as defined by the FDA. The major food allergens include: wheat/gluten, dairy, peanuts, tree nuts, egg, soy, fish or shellfish. These major allergens account for the majority of all food allergic reactions in the US. 
    
    Kosher: Kosher literally means "clean" or "pure". This refers to food that has been ritually prepared or blessed so it can be eaten by religious Jews.

Banza pasta tastes like a hearty twist on regular pasta to make meals delicious and even more nutritious! Banza pasta has 25 g of protein, 13 g of fiber, and 30% fewer net carbs than traditional pasta! Having fewer net carbs is great for those with diabetes because chickpeas have been shown to improve blood sugar control. I am someone who loves to make this pasta on days that I do not consume a lot of protein and am craving a pasta dish so I can get in some healthy protein and take care of my carb craving!
