Chicken Milanese

My favorite meal to get at Rocco's Wood Fire Pizza, an amazing restaurant in the Buffalo area, is Chicken Cutlet Milanese. When quarantine started, all my family wanted was a delicious fresh meal like one from Roccos. My dad and I got to work and created our version of a fresh and delicious Chicken Milanese! Now it is our new favorite meal to make!



 

Nutritious and Delicious


The main ingredient is the most important, it is the arugula. Arugula, a peppery salad green, is a staple in Italian and Mediterranean cuisines. It is often eaten raw and is an excellent source of vitamin K.


Leafy greens are at the top of the charts for vegetables because they contain vitamins A, C and K, potassium and fiber with only 5 to 40 calories per cup.


The Dietary Guidelines for Americans recommend consuming at least 1½ cups of dark green vegetables per week; this is in addition to the requirements for other vegetables! You can eat more than the 1½ cups per week but, because of their high vitamin K content, large amounts of leafy greens may interfere with the effects of medications such as blood thinners like warfarin. Anyone taking these medications should consult with a doctor or Registered Dietitian.
