Baked Caprese Baguette

I love snacking, especially during this quarantine! I wanted to come up with a snack that was along the healthy side that could also be made as a meal.




 


Nutritious and Delicious!

I was craving chicken caprese but did not want to make a whole meal before dinner. I wanted a refreshing snack that reminded me of chicken caprese which is where I came up with this Baked Caprese Baguette.


The ingredient that gives this so much flavor is the tomatoes! Now i know that tomatoes are a very controversial topic when it comes to whether it is a fruit or a vegetable. I want to help ease the uncertainty by letting you know that, according to science, tomatoes are botanically classified as a fruit. All fruits have a single seed or many seeds inside and grow from a flower of a plant, which tomatos do! The reason there is so much confusion is because tomatoes are generally used in savory dishes along side of many other vegetables. The culinary application for tomatoes shows just how versatile this fruit really is!


Tomatoes are very readily available whether it is a fresh tomato or using canned tomatoes as a good substitute when tomatoes aren't in season. Tomatoes are a good source of potassium and vitamins C and vitamin A. Not only are tomatoes a good source of potassium and vitamins but tomatoes are rich in lycopene, an antioxidant that gives tomatoes their red color. Lycopene have been linked to health benefits ranging from heart health to protection against certain types of cancer
